This class focuses on the precision, elasticity, and speed required for Asian noodles and dumplings. You’ll learn how to work with softer, more hydrated doughs and explore techniques such as hand-pulling, folding, steaming, and broth-based cooking.

In this session, you’ll explore Italian pasta traditions, from egg-based doughs to filled pastas and baked classics. Emphasis is placed on texture, balance, and consistency, giving you the confidence to prepare pasta from scratch at home.
